Ingredients

For the Base

  • 8 flour tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded cheese

For the Filling

  • 1 onion diced
  • 1 bell pepper diced
  • 300 g shredded chicken or ground beef, or beans for a vegetarian option
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

Prepare the Filling

  • Heat oil in a skillet.
  • Sauté onion and bell pepper.
  • Add shredded chicken and season with chili powder and cumin.

Assemble the Enchiladas

  • Warm the tortillas briefly.
  • Spread a thin layer of enchilada sauce in the baking dish.
  • Fill each tortilla with the mixture and cheese, then roll.

Bake

  • Pour remaining enchilada sauce on top.
  • Sprinkle cheese over everything.
  • Bake at 375°F (190°C) for about 20 minutes.
