Ingredients

Main Ingredients

  • 2 lbs beef cheeks trimmed
  • 2 tbsp olive oil
  • 1 large onion diced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 4 garlic cloves minced
  • 2 cups beef broth
  • 1 cup Red grape juice
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 tsp dried thyme

Seasoning and Aromatics

  • Salt and freshly ground black pepper
  • 2 tbsp all-purpose flour
  • 1 tsp smoked paprika
  • 1 tsp dried rosemary

Instructions

Prep: Chop vegetables, mince garlic, and season beef cheeks with salt and pepper.

    Sear: Heat oil in a Dutch oven, sear beef cheeks for 3-4 minutes per side, then remove.

      Sauté: Cook onions, carrots, and celery until softened. Add garlic and cook for 1 minute.

        Deglaze: Pour in red grape juice, scraping up browned bits. Stir in tomato paste.

          Braise: Add beef broth, bay leaves, thyme, and rosemary. Return beef cheeks to the pot.

            Cook:

            • Oven: 325°F (165°C) for 3-4 hours.
            • Slow Cooker: Low for 8-10 hours.

            Pressure Cooker: High pressure for 60-75 minutes.

              Finish: Remove beef, strain and reduce the sauce. Slice meat and serve with sauce.
